Tap the Pokeball on the bottom-middle of the screen, then select Pokemon when the menu pops up. This should bring up the inventory of Pokemon you have captured.
Tap on an individual Pokemon, scroll to the very bottom, and you'll see Transfer. If you select it, it will transfer the Pokemon to the Professor you met at the beginning of the game, and in return you will get a candy for that particular breed of Pokemon.
Careful: once you transfer that Pokemon you can't get it back. I've been transferring my low-end Pidgys and Weedles (of which I have tons), holding onto the evolved or high-CP ones, and then evolving others for XP.
