I listened to the first two books on tape, but had to go back to the wiki timeline.
The nights watch and the wall are built AFTER the first run-in with 'the others', when the 'the others' are defeated by the first men and the children of the forest. Then apparently Bran the Builder sets about building the wall and Winterfell.
I'm hypothesizing that after building the wall and winterfell when the Andals came to westeros, Bran the Builder was taken by the Children of the Forest and turned into the leader of the white walkers because he was Bran the Builder, in the mythos of Game of Thrones, he's close to a godly man. For the Tolkien nerds out there he's like the Elendil of his house.
Who better to recruit to your defense than that guy?
