At the end of the day you get the best product for your price point. If you think theres something out there thats better but you have to import it from Timbuktu and its going to cost a fortune or whatever then you have to decide if your market strategy of being a mid-range eatery really warrants this and whether you can turn a profit in the long-run.
But you're not going to get a pat on the back for it.
What did Earl's think was going to happen? That they were going to corner the market on the Ethical Eaters while simultaneously taking people who are willing to part with dollars for a decent mid-range steak and rubbing their noses in their mediocre humanity and middling ethics?
Yeah, that was going to work out well. Whats this you say? Its already blown up in their faces in under a week? No one could possibly have seen that coming.
