Default TV on Wall - Ethernet and no HDMI?!

So my inlaws just built a new house and took possession yesterday. I went over to help mount their TVs and noticed that it has a power plate fo rthe tv behind the mount area, but it also has a plate with a coax (Is this 1984?!) and THREE ethernet ports. So I am confused on how I mount the tv and run hdmi from the shaw cable box to the TV?! I See some expensive ethernet to coax adapters online, but that seems ridiculous - Why isn't it just an HDMI port!?

I then see, in the corner of the room, another plate with the same coax and three ethernets, which I assume is the termination side of the TV plate (I'll have to check with builders, as each room seems to have such a plate and they seem to all run to the utility room).

So I think what I need to do is get an HDMI to ethernet adapter at the cable box side and then the same for the tv side?!

I am hoping someone with a similar setup can tell me how they ran it.
