Derailleur clutch seems to be working fine (new derailleur). Only thing I can think of is a problem with the chainring itself. It has, maybe, 500km on it? Do these things wear out that fast?

One up came out with a small upper chain guide so I suppose that says something. I haven't had dropping issues with the wolf tooth front ring on my fatbike. Lots of km on that ring. My raceface ring on trail bike is ok as well but newer. I used to run a small DIY upper chain guide with a normal 28t ring, no clutch derailleur and never dropped a chain. If I was having problems like you, change the ring or get an upper guide. I've read that chains can start dropping when the ring becomes worn.
