Singletrack bikepacking is pretty hardcore dude! I don't think I would commit to that, i'm looking for something in between that is still ok on the road, but ok on gravel and dirt also. I feel that if you go right into setting a bike up for singletrack, it's going to be a beast and going to be a huge pain on the road.
