What are your thoughts on the pickled ginger at sushi restaurants? That's usually just ginger, rice vinegar and sugar I believe.
Other pickled foods... (There are varied recipes)
Basic Kimchi I believe is cabbage, salt, garlic, ginger, sugar, pepper flakes, radish and scallions.
A basic pickled apples recipe I saw was apple, vinegar, sugar, salt, black pepper and coriander.
Asian pickled cucumber is rice vinegar, sugar, soy sauce, fish sauce and crushed red pepper.
Not all pickles have Dill. Dill Weed can be added fresh to food, not just pickles/pickled.
