I think a plain pickling liquid would just be vinegar and maybe some sugar, so it's not too tart. For additional flavour, you can add stuff like dill, peppercorns or garlic. You can use dill with some fish and chicken dishes, but they're not pickled. It would be like using rosemary when preparing beef or lamb.
