At home I always make myself one of these three:
Hawaiian Omlet: Cubed ham, fresh pineapple, and mozza. Season with Oregano.
Baked Potato Omlet: Cubes of baked potato, bacon bits, chives or green onions. Top with sour cream after it's on the plate.
Splumbo Spicy Italian: Sausage cut in small pieces, chopped serano pepper, mozza. Top with spicy tomato sauce.
Really very tasty.
