Off topic, but has anyone ever run into crazy bag boys who believe chocolate milk has no sugar and the sweetness comes from the naturally occurring calcium? No? Just me? Cool story bro?

I can also believe the different brands do taste different. Based on some conversations with guys that deal with dairy, this is often due to a slight difference in QC and regular storage of milk, sometimes a cow has a bad day, sometimes the delivery takes too long etc.

I am not sure if milk can be "reworked" but I know butter and ice cream can be reworked using lower quality and higher quality dairy to bring up the average (it's frozen first to kill bacteria and whatnot, but this affects taste. This is "fixed" by putting in higher quality cream for instance). Those who are sensitive to the taste may taste the "sourness" more easily than others. This is because of what milk as a natural product. It's harder to regulate how it ends up, so my understanding is that the basic rules are based on bacteria concentrations and whatnot post pasteurization.

I am not sure how the different brands do things differently. I just know it's very interesting to see a tanker truck filled with milk/cream.
