That's really kind of non canon though. You never saw that in the original trilogy, and in the PT it was pretty clear that the Republic under Palpatine did hings like defending the Wookies.
Palpatine even had non humans in his senior cabinet with Sly Moore and Mas Amenda or whatever his name was.
Palpatine also recruited a clear non human as a apprentice, and Grevious wasn't human.
On the Legends side, while he clearly enslaved races, he also had a senior alien running fleets in Thrawn.
Lets be clear thought
Palpatine was the heroic reformer of a broken down republic that was rife with corruption, he clearly had the vision that the Republic had to be cleaned up and destroyed from the inside.
