Sounds like you know your numbers. My best suggestion is get as much info as you can to the replacement value. Spend $20 on buying bike magazines and Buy&Sell's, even ones from other cities. The insurance company will have a value in mind; make sure you show them what the big is truely worth. You still are their customer; be firm but calm with the adjuster.
