My go to easy supper is chicken and rice.
Preheat the over to 425
On a pan (usually lined with aluminum foil for easy cleanup) sprinkle olive oil.
Place chicken breast on pan (lightly coat in oil)
Sprinkle Cajun spice (or Italian) on chicken. I also use crushed red pepper for a little kick.
Bake for 25 minutes.
Throw in a pot of minute rice and voila!
