You're paying a premium for the S6 edge just for a nice looking gimmick. Unless you want to really show off your phone, it's not worth it.
The S6 reviewed better than the S5 in general, and it'll have a less cumbersome version of Touchwiz installed as well. The S5's biggest weakness to many was that it was trying to do too much and should have focused on being just a smartphone. The S6 has medicore battery life (but has turbocharging, I think?) and looks like a fingerprint magnet and easy to drop.
Personally, I'd go with the S6.
