I think it would be a lot closer to OT hockey than 5 on 5 allstar play is to actual games.
I also think a tournament format would bring out the competitiveness of the players better.

5 on 5 invites a lot of coasting. The trailing guy coasts in and takes a nice pass from another guy and scores.
They won't be able to coast in 3 on 3 unless they want Johnny or Kane or some of the other slick players making them look stupid.
