TOS - loved the first year, sadly the second year had a lot of bad hits because of budget cuts, and we ended up with some truly terrible episodes. None of the other series ever replicated the easy chemistry of this first cast, and the easy mixture of humor and seriousness and some of the outstanding storylines. Some of the best episodes were the simplest ones. None of the other series can ever touch episodes like balance of terror, space seed, city on the edge of forever, mirror mirror or piece of the action (funniest episode)
TNG - Had some good moments, but they took the whole benevolent humanity too far and it became bland and colorness. They had some very good episodes, but overall the show to me was just meh. In later years it really became the Picard and Data show, and the other cast members were basically clothes hangers
DS9 - Loved this show because it was very dark and really took off in the later years. Humanity was certainly flawed throughout this season. Sisco was the best Captain in my opinion after Kirk. He was willing to betray himself to win, when he basically deceived the Romulans and stood by while the Ambassador was killed. We saw secret cabals and coupe attempts and Humanity in a fight for survival. But they had some great and funny episodes. The baseball game was one of my favorite episodes.
Voyager - To me utter crap that took the whole technology pull miracles out of your butt thing from TNG to a stupid height. Every week they were re calibrating the main deflector array. I never thought that this crew had great chemistry or charisma. They could have really taken this in some amazing directions, but instead it felt like a badly constructed Bing and Cosby on the road to movie.
Enterpise - Had great potential, of mans first steps into deep space, and threw it away. I think they panicked when they had the time travel arc with the Nazi's and never got it back. The acting just wasn't that good, nor was the premise. They actually came together briefly in the mirror universe storyline, but that was a short arc. The worst of the series to be honest.
