If you haven't seen it already, I highly recommend "the Exterminators", another really great Vertigo title. It's got great plot and characters, as well as fantastic art from Tony Moore, the original "Walking Dead" artist. It's about 7 issues in, so there might be a trade coming soon. Definitely worth reading from the beginning. "Fables", as mentioned, looks like it's starting an interesting arc as well and might be at a good jumping in point.
Also, if you're a Frank Miller fan, check out "300", his take on a battle between an outnumbered Spartan army and the Persians. I believe it's being made into a movie.
Garth Ennis has been fantastic on "Punisher", and has a new series of a bunch of anti-super hero vigilantes, "the Boys". The first issue was excellent.

Funny, I really didn't like 300 for some reason. Maybe I'll read it again. I'm in the middle of re-reading the Watchmen as well.
