I think you are right that "visible minority" isn't the best term generally speaking. Han Chinese make up about 6x the population of White North America and in China are certainly very very far from any white-based oppression.

If white-focussed racism is acceptable when referring to North America, then Han Chinese focussed racism is certainly acceptable when referring to China. In my view, neither is. Better to practice neither than excuse your own use of one while "tut-tutting" against the use of the other!
