Yup, I would second the basic bio courses...I took a couple (for the non-science major type of thing). I think one - maybe it was 307 or something was not too bad. A bit smaller class, and the prof did take attendance (ha) but it was pretty easy if I remember correctly. Had to do with plants or something. And everyone in it was in it for the same reason (i.e.. needing a science or filler course).
Sociology ones are pretty good, there are some pretty cushy ones too. Although like someone said you usually need the basic socio prereq. I took a deviance course which was pretty interesting, and just had 2 MC exams. Can't complain. (although I am in the people professions, so...).
IT depends what you are interested in, though, at the end of it. This was a looooonnnngggg time ago (eek! likely 7-8 years ago already!), but I remember taking an ok anthropology course that was kind of interesting and not too hard. However, if you aren't interested in that type of thing I wouldn't recommend it....
