Lengthy, story-based games with solid battle systems and memorable events/characters. Each game is unique in it's setting/story/characters so you don't need any franchise knowledge to just jump into one, yet certain thematic elements and designs have carried over through the whole series. Also some of the best music/soundtracks in gaming.
As far as anime style story telling and characters go, it's the best there is among video games (in my opinion, and many others). Final Fantasy VII was by far the most popular game in the series -- even my friend who is not a series fan is excited about the remake, it's the only one he played.
Compared to something like Fallout, there's a lot less choice, both in the narrative and in the character progression. It's quite directed and driven and there's a lot of cutscenes -- the amount of exploration you can do really depends on the game. Honestly, every game is so different it's hard to pinpoint any one thing that makes the series popular -- and that's probably what makes it so popular! Everyone has a favorite.
