There are a couple of issues facing a XII re-make. First, it's one of the more recent ones, so it's not utterly outdated in terms of the visuals. They did get to a X re-master, but that's arguably the most popular game in the series other than VII and maybe VI.

Second, XII is pretty underrated and not much-loved. Personally, I liked the game quite a bit, but a lot of people didn't think much of the semi-real-time battle system or the characters. It was also one of the more political-intrigue-laden FF's, which I was a fan of but some people thought made it plodding. My problem plot wise was more that this was all really well set up, but then they never really took advantage of the world they'd created. There was a ton of unrealized story potential there that I suspect ended up being left on the cutting room floor so that the game didn't take eons to complete. Also, it had one of the least memorable villains in the series, which really lowered the stakes for the finale.

Of games I'd like them to re-make after VII's done, my list goes 1. Chrono Trigger, 2. FF6, 3. FFIX. I'd play VIII, IV, V, or XII but they don't make my top three.
