Every sub place I've ever been to let's you pick the toppings. However, there's a profound difference between a place like Cafe Mauro (here in Calgary, which is a small high-end sandwich place) and Subway; the ingredients at the latter are mediocre at best, so the taste *needs* to be modified by some kind of over-riding flavour, like a sauce or mustard, imo.
It's like someone wanting a burger without any ketchup or mustard. It's weird, unnatural, and probably indicative of a misspent childhood and possibly severe psychological issues.
PS: Mr. Sub is way better than Subway. But I'd still be dubious about no sauce.
