This seems like a weird one. I wasn't aware you had to put it on your lap, I assumed it was just something everyone did because people are clumsy and putting it on your lap or holding in hand got it out of your way on the table.
More manners and conventions... I am pretty sure no one gives a crap about which fork or spoon to use now. Grab and go. I am also pretty sure most servers don't know the "X" or "\\" meaning of the placement of your utensils on your plate.
For sneezes, I say "A tes souhaits" for fun. Bless you or Gesundheit just sound weird to me.
