Actually, the eggs are not claimed to be fresh for all egg products at McDonald's in the United States. The only egg product that is claimed as freshly cracked is the Egg McMuffin.
It would be too expensive to replicate an unbeaten egg artificially so they use real eggs for it. They did try with powdered whites and powdered yolks treated with a chemical to allow them to keep their shape when reconstituted and dropped into the egg white but apparently it made them taste so unlike eggs that it was abandoned. DO NOT put it past them to try again as technology improves.
