I drove an Infiniti FX for six months. It was nice, but fun to drive? I've never heard a car person describe any crossover as fun to drive. They handle like complete ass.
I suppose what makes something fun to drive varies from person to person. When I think fun to drive I think of stomping on it when the light turns green, laying rubber, fish tailing around a corner, drifting a bit, RWD, taking the top off a convertible, a V8 rumbly sound, etc.
What about an FX/Murano or EX/Rogue are fun to you?
If I had to have just one car, I would definitely take the FX over my Mustang. A Mustang isn't a nice year-round daily driver. It is
only for fun.
