Actually, ketchup is made from tomatoes that are perfectly all right at the time, but won't last long enough to be shipped across the country by truck.
The same kind of thing goes on with other produce. In Costa Rica, I used to get the finest bananas you ever tasted for three cents a pound, because they would not survive shipping. Only the tough, gross, green bananas were long-lasting enough to survive a two-week trip on a banana boat. The good bananas had to be eaten right there in the country.
