The problem is, the minute you route sound through the TVs optical out, it usually (in most models) will shut off the TV speakers.

I would just buy a half decent soundbar if you want a no fuss no muss deal. I mean, Sony makes some great ones for less than $200.

EDIT: That said, if the audio stays on when hooked into the RCA stereo outs, you can just buy something like this:
