Why do you want your kids to go to a Catholic school? Because it has a better reputation? Because you want them to have a religious education?
Or because it's super convenient and you can't be bothered to shuttle your kid to whatever other school is available because it isn't your 100% favourite thing...

It would be hypocritical if the post was my kid is in catholic school now how can I get him out of religion class. But it isn't. He wants to know how to get in the school.
One thought, phone a different school and ask if you are in the process of becoming catholic then does your kid get in. Then start that process when enrolment for grade 1 is occurring. Then conveniently quit becoming catholic and they won't check again.
