Depends on blind date or not. If it's a blind date, go for something short. Coffee, one drink, two max, cut it off after 1-1.5 hours. If you already know them, well, I don't know, I don't date people I know. My thinking is, the more you talk, the more likely it is you'll screw it up. Also if you establish the short time frame before you even go, they know they won't be stuck there for hours, and they won't do that "have a friend call 20 minutes in with a fake emergency" bit, and more importantly, they'll be more relaxed because no matter what happens it'll all be over soon.

If it's going swimmingly, that's even more reason to end it early. Leave on a high note and build anticipation for date no 2.

Also, don't invite them to your place for a first date. Even if they agree to it (unlikely) the whole "will I ever leave this place alive" thought will be in the back of their head the whole time. Again this may be different if you already know the person, but probably not.
