I don't think the vote counts matter much. You either go in knowing you have the majority or go in thinking you have the majority and get blindsided. After that it's usually easy to see who stood where. The vote count does add the potential of "mystery votes" that can lead to witch hunts, so if anything I think it makes the game less predictable in the very rare occasions that happens (America's Player Eric).

I called it before the show that Jocasta would be voted out as although CBS tried hard to make it sound like Zach was going to be voted out that never really made sense from the perspective of the alliances to keep Jocasta who if she won HOH would put two of them and get rid of Zach who have the backs of most of the alliance. I always knew that when cooler heads prevailed that they would realize how foolish it would be to evict a number on their side so early. The change wasn't last minute before the vote like you say as the clips they put up are over days preceding the vote. At the time of the vote we all know who was being evicted just like all the votes previous. Zero suspense.
The vote count matters because lot of players vote to eliminate the houseguest the circle of power wants out not the actual houseguest that they would rather evict. What the CBS doesn't show on air very often is before every vote all the house guests go around asking who the house is voting for and they vote that way because they are scared to go against the grain. As you said there's a witch hunt if you vote against the house which means the entire process is flawed as players are voting out of fear/group think and not individual strategy.
The way it works now people outside the circle of power formed typically at the beginning of the show have very little power or chance to make the final two as they end up being forced to one by one evict their allies. Not announcing the vote count would make it possible for a group to attempt power plays without having to fear consequences if it doesn't work out as nobody will know that outliers voted against the house. That's simply not possible today and the result is the same old predictable votes and anticlimactic Thursday shows.
