I have played around 1000 games versus on the computer on nhl14 and more then 1500 on each of the previous installments. Because I have never seen "score on every single shot, no matter where it's taken from" I cannot comment on why you are seeing these issues. I change my defense to collapse and try to play positionaly and do not chase the hit or the puck.
Next time the computer scores on every single shot no matter where it's taken from take a video and share it so we can give feedback on how you can correct your gameplay to account for it.
