Most likely won't be carbonated well . flavor wise it depends on the beer . some German wheat ales are open top brew to purposely infect the beer with wild yeast to get a bitter taste. Those are to be drank fresh. Usually Lagers which must be cold fermented and High gravity porters and stouts are better for long term keep.
