I can attest to Thermador being high quality when it comes to ovens. I was going to get either a Dacor or Thermador oven but as you mentioned, there was a great sale by Thermador at the time so went with them. I have had mine now going on 6 years without one problem or repair.
It has options for regular bake, roast, and broil, then for pure convection, or convection bake, convection roast or convection broil, and also for proof (which I always use when making bread), warm, probe, and dehydrate. It has two timers, and then normal stuff like self clean, timed cooking and the like.
The oven is also very large so I can put any roasting pan or cookie sheet in it with no problem and some of my cookie sheets are 15" x 18".
