Look at his +/- compared to his teammates and you instantly see his was NOT inflated by a team's overall defensive play or systems. You could make the case that Bergeron, while great defensively and was dominant on the dot with an amazing 58.6% FO%, had a similar +/- to a lot of his teammates.
That and Kopitar was the much better offensive player, which they always seem to take into account.

I voted for Toews, but you're right, it's easy to make a case for Kopitar.
On the subject of Kopitar's offensive game, he was LA's leading scorer for both of their cup runs, and he's been their top regular season scorer for the last 7 seasons straight. The last guy to finish first other that Kopitar was Cammy back in 06-07 with his 80 point season and Kopitar was a 19 year old rookie.
