I'm not sure how authoritative it is, but both Dictionary.com and Google have "Nip" listed as an offensive word for Japanese.
Luckily there is no team named the Nips lol, but you are absolutely right that "redskin" appears to be ubiquitously defined as offensive, including in Google, Dictionary.com and Merriam-Webster. I would think the dictionary is pretty much as authoritative as it gets. Redskins is racist.
