Stephanplatz is definitely the main square. Lots of shops & restaurants and the old cathedral. Parking can be a bit of an issue, so if you can park further out, the underground metro is literally the easiest I've ever used and it's pretty cheap. Stephanplatz is at the end of the red line I believe.

That sounds like a good idea. Especially cause we'll be in a full size SUV.

A week in Paris seems like the bare minimum to hit "the main sites" at a liesurely pace with some shopping and relaxing so I think you'll be good. I suggest tar tar, carpaccio, smoking with the 13 year olds and coffee.
Having a coffee on the Eiffel tower was one of the coolest experiences ever.
