A week in Paris seems like the bare minimum to hit "the main sites" at a liesurely pace with some shopping and relaxing so I think you'll be good. I suggest tar tar, carpaccio, smoking with the 13 year olds and coffee.

Having a coffee on the Eiffel tower was one of the coolest experiences ever.
