Rice flour, potato starch, and other gluten free flour substitutes can also be a lot higher on the glycemic index, and of course foods high in GI can increase your chances obesity, diabetes, and heart disease. I'm not saying these specific foods are bad for you , but if you don't have an actual gluten intolerance then why bother?
Same with replacing those lost vitamins elsewhere, absolutely it can be done, but unless you really need too why go through the effort? Although on saying that I also want to add that you should be eating stuff like Quinoa and Oats anyway, not because it's gluten free, but because it's delicious and good for you.
Next time you're at the grocery store look at the things that say gluten free on them. Then read the other ingredients. Gluten free frozen pizza, for example, is still full of processed crap. Just because it's gluten free doesn't mean it's good.
At the end of the day, gluten free doesn't = healthy. If your girlfriend has celiac disease then you know how hard it is to maintain a healthy gluten free diet. Imagine how bad it is for people that just see "Oooh gluten free!" and think that it's healthy for them. That's where I think this fad is dangerous.
