Sorry didn't catch your edit before about eating too much gluten and getting beer belly or something. Same can be pretty much said for eating too much of anything though.
I say the word fad in this situation because it's not necessarily healthier. Gluten isn't bad for you unless you have an intolerance to it. Going Gluten free if you don't need it can be even worse if you're not careful, since a lot of food containing gluten also contains other essential vitamins that you now have to get elsewhere. Some gluten free food is so processed it's scary.
Slippery slope. If you're not celiac or have some other professionally diagnosed intolerance or allergy, then by all means eat gluten free, hopefully the hipsters and idiots move onto the next thing and stop giving you a bad rap.

Gluten free food a usually aren't processed . Its a simple switch from wheat or barley flour to rice flower. Those missing vitimans can be attained though other grains as quinioa, spelt and especially in oats. Oats are rich with the same vitamins and contain such a low amounts of gluten that only 1% of those 1% diagnosed are affected with A large dose.
