I had an interesting tasting the other week. I had an old Rochefort 8 that got forgotten about/aged at cellar temperature for almost 2 years. In order to see what 2 years of aging did to it, I bought a new one to compare. In comparison, the new one had much more of a crisp, fresh, and fizzy flavor dominated the taste. The aged one was lacking that, but had a much more complex and deep flavor. Both were great, but to be honest the newer one was probably slightly preferred. It was fun to see if aging was worth the time and what it did to the beer. I guess I better drink my Westy's sooner than later.
