They are there to control the server because the server wants your money.
It's like dangling a present to a kid and saying if you want this present you study hard and get a good grade if you want it. If not, you won't get the present. Understand? It's POSITIVE AND NEGATIVE REINFORCEMENT.
That's what tipping is. To give someone something they gave to you, good service. They want something, I want something. The way to get it is to do what *THEY* want you to do, DUHH.

It's funny, but that's how tipping really works, except if it's something the server actually has control over. In this, the server has no control over some of the these things, so I am not specifically saying what he is. What I am saying is, you do poorly, you get deducted. You do well, you get rewarded.
Her not knowing the dressing is something she should know, so in that case I agree with a tiny deduction. She also should know which person had which drink. Minor mistake, but still should know and you notice how she didn't even *TRY* to get it right just brought out the drinks without looking at her written order. She should have read her written order before bringing it out, noticed which one was for which person x x They were sitting just like that. So on the tray made sure the drinks were in that position left person had red wine, right person had white wine. See the not "TRYING" her best?
Now the bread quality wasn't in her control, that was just for laughs for this show. I have never watched this show before, but this video is funny. Them being out of something wasn't her fault either. Just saying it's a funny silly video.
Tipping works based on what does the customer want and satisfy them, not yourself as the server or owner or manager.
