I know I'm several pages late for this but the Remarkables, which were used for some mordor scenes, have a ski hill on the back side. So yes, you actually can ski in mordor. Same with Ruapehu on the north island.
Slopestyle is pretty big down here since the mountains don't really have enough vertical or terrain for proper racing.
