I've had a few jobs like those in my time. I also spent one terrible summer working in a restaurant (no offense to those that do it/like it, it just wasn't for me).

There was a lot of similarities between office grunt and restaurant server. You're at the bottom of the totem pole, everyone gets to tell you what to do and they can be rude while they do it, it can be physical, you have to be organized...

When you are no longer the grunt (or even find yourself in a temporary position of what some people might consider "authority", such as being a customer in a restaurant) there are two options.

1) You can remember what it's like to have that job, recognize that the server is a person trying to pay the bills, and should be treated with the same amount of respect you hopefully treat everyone else with.

2) You can use your "authority" as a customer and say "hey, I'm the boss here, so I'm going to take out my own frustrations and unhappiness on this person, because when I get back to work, I'm going to be the one on the bottom again...".

It seems like you've picked Option 2.

And, and here's a "tip"... Servers can probably tell, just in their first interaction with you, that you are going to be a troublesome, annoying customer, and your service will reflect that. And if the response is "well, then they aren't getting my tip...", they probably know that already, and have decided that it isn't worth the hassle or headache to give you anything but the bare minimum.
