It has to do with coffee beans releasing gasses that could potentially pop a bag, that's why most decent coffees come with that valve thing on there to let pressure out. Plus wikipedia says this:

So I guess the "non-sealed" bag is best for home use? Having said that, our office coffee supplier delivers everything in ziplock type bags, and given that most people are opening/closing the bag daily there's probably not much risk of the pressure causing much of anything.
