The "hide headgear" option will be your friend.
I'm very picky about what my characters look like. I was a bit irked finding out that some 'chest' gear had hoods that you couldn't "hide", which I thought pretty much defeated the purpose of the 'hide headgear' option in the first place. It makes even less sense when you consider the amount of facial customizing you can do...and then it gets auto-hidden under an ugly hood you can't get rid of.
