It can be stretched and not break, or break completely. Although, I'm pretty sure it will break eventually.
I'm not sure it's exactly 'flexible' as stated below your post, but some have more give or strength than others.
It also can hurt some girls/women more than others depending on fitness levels. I've heard of dancers having strong hymens because of how they exercise their muscles. Course this is a pretty specific concern and I'm not willing to say it's 100% accurate. I have heard from more than one source though.
Also, on the flip side, as female sexuality has become more accepted in society there's also an increasing number of girls who have not engaged in sex, that have already broken their hymens themselves, so do not appear to be a virgin.
