I like Loki as much as everyone else does and am happy he's established himself as firmly as RDJ in this universe. but to me this illusion power becomes problematic, kind of like the death curing Khan blood in Star Trek. you have a thing that was used by a character to solve a situation he was in...great, now why not just use that all the damn time? if he can effortlessly cloak himself such that nobody can tell the difference, and create such an elaborate illusion of himself getting stabbed by a monster and dying, then there'd be no reason for him to ever just be Loki.
I've read a few Thor comics and while it's clear Loki does have the chameleon magic, he doesn't use it to the point where it's like Mission Impossible and anyone could be pulling off a mask as a surprise twist. he most often just spends time talking to people and putting thoughts in their heads to direct events towards his goal; more like the first movie. I just hope they don't get lazy with this plot device and have a character unmasking themselves as Loki every 10 minutes. but now it's kind of too late, and if he doesn't continue to overuse that power we'll be wondering why not.
