Well first thing, insurance isn't going to break your bank. It will be a small regular expense the same as hangar fees, fuel, etc. But if you do lose your ship, no insurance, and no cash to buy a new one, then you basically become a freelancer and take any jobs available (work for the local police, escort freighters, etc) and either fly a loaner ship or become a crew member on a bigger ship until you earn enough money to buy your own ship again (the starter ship is not going to be very expensive)

Chris Roberts has explicitly said that there will be no "grind" like there is in Eve or other MMO's
