Just got back from a mtn bike trip to Sedona. It was awesome. I think I like it better than Moab. A little more technical, but the trails had lots of flow, and you could ride them all from town.
A note on airline fees. We used Westjet. Two bikes. Got charged $50 for two oversize and $20 for one extra bag, so $120 in Calgary. We had to keep the bikes under 50lbs so we didnt get charged the $50 overweight fee as well. Leaving Phoenix, we got charged $50 total. The agent there was awesome.
Friends from Vancouver flew with Alaskan airlines out of Bellingham and paid $50/bike each way and had no weight limit so they stuffed all of their gear with the bikes.
Another friend from Calgary flew US airways. Kept his bike under 50lbs. Paid $207 going down and $278 coming back. Insane.
