If you mean countries that we actually visited and spent time in (and not just time in the airport or driving through), then for me it would be 7 (but I have been to them all numerous times, with the exception of Netherlands):

Croatia
Bosnia
Slovenia
Italy
Mexico
US
Netherlands

In Canada (8):

BC, Yukon, NWT, Alberta, Saskatchewan, Manitoba, Ontario, and Quebec

In the US (6):

Washington, Minnesota, North Dakota, Michigan, New York, Alaska
