You don't necessarily need a #1 defenseman to be a top team, but you do need a #1 center.
A group of 6 great can can play 18-20 solid minutes and within there game is going to be how it works.

With the possible exception of Carolina, every team that has won a Stanley Cup in the last 50 years has had a #1 D. You are correct in saying the #1 C is important. More important? You need both.
To the best of my recollection, New Jersey is the only team is the same span that won the Cup without a true#1 C ( Holik).
Most that have won have had a 1A and 1B.
